Just four ingredients, but a lifetime to perfect
What makes an authentic Pizza Napoletana are the pizza makers―the pizzaioli. Their dough recipe is simple yet secret. Just four ingredients―flour, sea salt, specialty yeast, and precise amounts of water―yields an art form recognized with UNESCO Heritage Status. The flour is unique, type 0 or 00 is the standard. After much kneading, the dough rests for fermentation. The magical amount of time, a debate amongst the pizzaioli, is 8-12 hours. The artful process includes twirling the dough to add oxygen which gives the light, airy texture. This traditional art of pizza making has been passed down for generations. In Italy, they prize their Neapolitan pizza’s authenticity and here so do we. The secret to this award-winning pizza is, “All in the dough!”
